With a few reliable quick-cook recipes on hand, you can prepare healthy dinners for the whole family even on the busiest days. This recipe combines Tex-Mex and Indian cuisine. It sounds strange, but it turns out delicious: chicken fajita pizza on naan bread. Simply grill chicken breast pieces and vegetables fajita-style on a grill pan, top with tomato sauce and grated cheese, pop in the oven, and dinner will be on the table in less than 15 minutes.

Ingredients:

  • 1 tsp olive oil or more as needed
  • 450 g skinless and boneless chicken breasts, cut into strips
  • 0.5 cups chopped mushrooms
  • 1 medium red bell pepper, thinly sliced
  • Half a medium red onion, thinly sliced
  • 1 tsp fajita seasonings (see Note)
  • 2 thick lavash breads (recommended: whole grain naan)
  • 0.5 tbsp. tomato sauce
  • 0.5 cups grated cheddar or gouda
  • Submission Guidelines: sliced ​​avocado, chopped cilantro, freshly squeezed lime juice
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat the oven to 220°C. Meanwhile, heat the oil in a grill pan or sauté pan over medium-high heat, then add the chicken. Cook for about 5 minutes on each side, then remove from the pan.
  • Step 2
  • Add more oil to the skillet if needed, then add the mushrooms, peppers, onions, fajita seasoning, and 1/2 teaspoon each of salt and black pepper. Cook, stirring occasionally with tongs, until the vegetables are slightly tender, about 5 minutes. Remove from the skillet.
  • Step 3
  • Place the naan on a baking sheet or pizza stone. Spread a layer of tomato sauce on each naan, then top with chicken, vegetables, and cheese.

    Note

    You can cook filling in a slow cooker, you will have a blank that only needs to be heated.
  • Step 4
  • Bake until the cheese is melted, 10–15 minutes. Top the pizzas with avocado slices, sprinkle with cilantro, and spritz with lime juice if desired, then cut each pizza in half and serve.

    Note

    If you don't have fajita seasoning on hand, mix together 0.5 teaspoon each of ground cumin and chili powder.
