The highlight of this delicious flatbread is the topping of sesame, poppy, and dried onion, which adds a unique flavor. Some of the topping is mixed into the flour and natural yogurt dough, while the rest is sprinkled on top of the finished flatbread, brushed with butter. To bake, use a pizza stone or an upside-down baking sheet preheated in the oven to create a super-crispy bottom. Serve the sliced flatbread with the topping in a bread basket for lunch.

With a fork, combine 1 1/2 cups flour, 3/4 cup whole-milk yogurt, 2 teaspoons poppy seed, sesame, and dried onion mixture, 1 teaspoon each baking powder and coarse salt, and 1/4 teaspoon baking soda. Cover the dough and let rest for 20 minutes. Using floured hands, shape the dough into a 10 x 12-inch rectangle on a floured baking sheet. Bake (on the parchment) on a hot pizza stone at 450°F (245°C) until golden brown on the bottom, 8 minutes. Brush with melted butter and sprinkle with additional poppy seed, sesame, and dried onion mixture.
