Funeral potato casserole is a traditional dish in the American Midwest, originally developed by Mormon communities, who prepared it primarily for funerals. This is where the casserole gets its name, but don't let that fool you: it's a very popular dish and is made for any occasion, even Christmas! After all, how can you not fall in love with a baked potato drenched in a gooey, creamy cheese sauce under a crispy crust of crushed potato chips? Three types of cheese are used in the preparation: Monterey Jack, sharp cheddar, and Parmesan. This combination makes your casserole the most delicious treat on the table.


Ingredients:

  • 1 package (0.8 - 0.9 kg) of frozen grated potatoes for frying
  • 110 g salted butter
  • 1 medium onion, finely diced
  • 1/4 cup premium flour
  • 1 cup of milk
  • 2 cups lightly salted chicken broth
  • 1.5 cups grated Monterey Jack cheese
  • 1 cup sour cream
  • 0.5 cups grated sharp cheddar
  • 2 cups potato chips
  • 1/4 tbsp. grated parmesan
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 350°F (175°C). Grease a 9 x 13-inch baking dish with 1 tablespoon of butter. Remove the potatoes from the freezer while you prepare the remaining ingredients.
  • Step 2
  • Heat a large, deep skillet over medium heat and melt 6 tablespoons of butter. Add the onion and cook, stirring occasionally, until softened, 3-4 minutes. Sprinkle the flour over the onion and toss to coat evenly. Cook for 1-2 minutes, but don't let the flour turn red or darken.
  • Step 3
  • Whisk in the milk, breaking up any lumps. Add the broth and whisk again if any lumps remain. Bring the mixture to a boil and let it thicken, about 3 minutes. Season with salt and pepper to taste. Turn off the heat and stir in the Monterey Jack cheese, sour cream, and cheddar. Stir in the potatoes. Transfer the mixture to the prepared baking dish.
  • Step 4
  • Melt the remaining 1 tablespoon of butter in a small skillet. Place the potato chips and Parmesan in a bowl and crush the chips. Pour in the melted butter and toss to coat completely. Sprinkle the crispy crumbs over the potatoes.
  • Step 5
  • Cover with foil and bake for 20 minutes, then remove the foil and continue baking until the casserole is golden brown on top and bubbly around the edges, about 15 minutes more. Let rest for 15 minutes before serving. Serve as a side dish. main meat dish.
