Italian tortellini pasta is a miniature dumpling filled with meat, ham, cheese, spinach, or a combination of several fillings. Besides being eaten as dumplings—with sauce or in broth—tortellini can also be used to make a delicious pasta salad. Especially if you don't have enough leftover pasta for dinner, mix it up with vegetables and other ingredients. Tortellini with any filling will work here. And if you have several different types, it's even better! Combine cooked tortellini with vegetables, dry-cured sausage, and vinaigrette. It adds a vibrant flavor to almost any salad.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 250 gr. tortellini pasta
  • 1 cup diced smoked salami
  • 1 cup grated carrots
  • 1 cup frozen or fresh green peas, blanched
  • 0.5 cup chopped baked red pepper
  • 1/3 cup olive oil
  • 2 tablespoons white wine vinegar
  • 1 shallot, chopped

Cooking the dish according to the recipe:


  1. Bring a large pot of salted water to a boil. Add the tortellini and cook according to package directions. Then drain the pasta in a colander and rinse under cold water. Transfer to a bowl.
  2. Add sausage, carrots, peas and roasted peppers.

  3. Prepare the dressingIn a bowl, combine the olive oil, white wine vinegar, shallots, 1/2 teaspoon salt, and pepper to taste. Pour the dressing over the pasta salad and toss. Season with salt and pepper to taste and refrigerate for 3 hours.
