This light and airy yogurt mousse with a subtle lemon flavor makes a wonderful dessert after a hearty dinner. It's also low in calories. To achieve the right consistency, strain any excess liquid from the yogurt before serving. Before serving, sprinkle the mousse with crushed shortbread cookies. They'll add a pleasant texture.

In a heatproof bowl set over a saucepan of simmering water, whisk 2 egg whites, 1/4 cup sugar, and a pinch of salt until the sugar dissolves. Remove the bowl from the heat and beat with an electric mixer until stiff peaks form. In a separate bowl, whisk together 1 1/2 cups low-fat Greek yogurt, 1 teaspoon lemon zest, and 1 tablespoon lemon juice; fold into the beaten egg whites. Refrigerate the mousse for 2 hours.
