These delicious muffins are a great way to start your day. You can bake them while your family is preparing breakfast—it won't take you more than half an hour. Mix the muffin batter and stir in orange marmalade and orange juice. Top with a topping of sugar, spices, butter, and wheat germ flakes, and bake in the oven. The muffins will be incredibly moist, soft, and fragrant with a citrusy, spicy aroma. They'll also be topped with a delicious, crispy crust. Slice into a warm muffin, spread with butter, and enjoy with a cup of morning coffee.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Muffins

  • 4 cups premium flour
  • 0.5 cup granulated sugar
  • 2 tbsp baking powder
  • 4 tbsp (60 g) butter
  • 1/4 cup vegetable fat
  • 1.5-2 cups orange marmalade (2 cups if you like a more bitter orange flavor)
  • 1 cup orange juice
  • 2 tsp vanilla extract
  • 3 whole eggs, beaten

Topping

  • 0.5 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tablespoons melted butter
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 0.5 tsp salt
  • Wheat germ flakes, for sprinkling

Cooking the dish according to the recipe:


  1. Preheat oven to 190°C.
  2. Muffin batter: Sift flour, sugar, and baking powder together in a bowl. Using a pastry cutter, fold in the butter and vegetable shortening.

  3. In a small bowl, combine the jam, orange juice, and vanilla. Pour the orange mixture into the flour mixture. Add the eggs. Gently combine all ingredients, using no more than 10 strokes across the dough.
  4. ToppingIn a small bowl, combine white and brown sugar, butter, cinnamon, nutmeg, and salt.
  5. Fill muffin cups with batter. Sprinkle 1 teaspoon of topping on top of each muffin. Optionally, sprinkle with 0.5 teaspoon of wheat germ flakes for a crispier topping.
  6. Bake until set, 20-22 minutes. Remove the muffins from the pan and cool on a wire rack. Serve warm or at room temperature.
