A protein-rich quinoa side dish becomes even healthier, tastier, and juicier when paired with baked zucchini with garlic. The zucchini is thinly sliced and baked in the oven, then combined with cooked, spiced quinoa, olive oil, and fresh herbs. Add a few golden raisins to the side dish for a unique, multifaceted flavor. Serve as a side dish with meat or as a standalone vegetarian dish.

Recipe:
Cook 3/4 cup rinsed tri-color quinoa according to package directions, adding 1/4 teaspoon allspice to the water. Meanwhile, toss 2 thinly sliced zucchini with 2 tablespoons olive oil and 1 grated garlic clove; season with salt and pepper to taste. Bake at 450°F (230°C) until tender, about 10 minutes. Stir the zucchini into the pot with the cooked quinoa, along with 1/2 cup golden raisins and 2 tablespoons each of olive oil, chopped cilantro, and dill. Season with salt to taste.
