Prepare a delicious and healthy salad that combines true superfoods, a wealth of vitamins and essential micronutrients. These include quinoa and sprouts, which are at their peak nutritional concentration. Cooked quinoa is mixed with radish sprouts, broccoli sprouts, and fresh herbs, including radishes and celery, for added flavor. Toss everything with a zesty dressing of grainy mustard, lemon juice, and olive oil, and top with toasted salted sunflower seeds. This salad is very filling and can be served as a standalone vegetarian dish.

Cook 1 cup quinoa according to package directions; fluff with a fork and let cool. In a large bowl, combine 2 tablespoons grainy mustard with 1/4 cup lemon juice and a large pinch each of salt and black pepper; stir in 1/4 cup olive oil. Add the cooled quinoa, 4 ounces radish sprouts, 2 ounces trimmed broccoli sprouts, 3/4 cup chopped radish, 1/2 cup chopped celery, 1/4 cup salted sunflower seeds, and stir in 2 tablespoons each of chopped parsley and green onions; toss to combine. Season with salt and pepper to taste.
