A vodka-based Mojito is the perfect summer party treat. It's easy to drink both day and night, and the flavor is vibrant and pleasantly balanced. Unlike the rum used in a traditional Mojito, this recipe uses vodka as a neutral foil to the refreshing mint and invigorating lime. Instead of sugar, the drink uses simple mint syrup. Make it ahead of time and keep it in the refrigerator. Before serving, combine all ingredients in a pitcher and pour the Mojito into glasses over ice, garnishing with mint sprigs. This recipe makes four servings.

  2. Simple mint syrup:

In a small saucepan, combine the sugar, water, and mint leaves and heat over medium heat. Bring to a boil, reduce heat, and simmer, stirring occasionally, for 5 minutes, until the sugar dissolves. Remove from heat and let the syrup cool for 20 minutes.
