Sheep's milk Manchego cheese and smoked paprika add a Spanish flair to this pasta salad. If you have leftover ham from a dinner party, serve it along with tomatoes, roasted bell peppers, and fresh herbs. Toss everything with cooked pasta and dress with a mixture of sour cream, mayonnaise, and lemon juice. This salad is hearty, juicy, and perfect as a main course.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 220 g dry penne pasta
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp. freshly squeezed lemon juice
  • 0.5 tsp smoked paprika + extra for serving
  • 1/4 tsp finely grated garlic
  • 1 cup grated Manchego cheese
  • 1 cup diced ham
  • 1/4 cup chopped fresh parsley
  • 1/4 cup canned roasted sweet peppers, drained and chopped

Cooking the dish according to the recipe:


  1. In a large saucepan, bring salted water to a boil.
  2. In a large bowl, combine mayonnaise, sour cream, lemon juice, smoked paprika, garlic, 3/4 cup Manchego cheese, 1/2 teaspoon salt, and a few grinds of freshly ground black pepper.

  3. Add the pasta to boiling water and cook according to package directions. Drain and rinse the pasta under cold water to cool; transfer to a bowl with the dressing.
  4. Add the ham, parsley, and red pepper to the bowl and toss. Season with salt and pepper to taste. Sprinkle with the remaining 1/4 cup Manchego cheese and smoked paprika. The pasta salad is best served immediately.
