How to Make Plum Pie

This moist, creamy pie is quick to make and devoured in no time! This finger-licking-good pie is perfect for an evening or holiday tea party.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 0.6 kg cream cheese Ricotta or Philadelphia
  • 5 testicles
  • 300-350 g of flour
  • 100 g soft butter
  • 1.5 tsp baking powder
  • 0.3 kg of sugar
  • 1.5 tsp lemon zest
  • 3 g of vanillin
  • 1/4 tsp cardamom
  • 1 teaspoon fresh ginger
  • 8 tablespoons of fresh milk
  • 200 ml cream with 35% fat content
  • Powdered sugar
  • 1 kg of plums
  • 40 g of starch

Cooking the dish according to the recipe:


  1. The ginger for the pie must be fresh. It must be grated using a fine-hole grater.
  2. Wash the plums under running water. Cut each plum in half and remove the pit.

  3. Sift flour and combine with baking powder.
  4. Beat the egg in a deep saucepan or bowl. Add 200 g of cheese and 100 g of sugar. Mix with a fork.
  5. Add 1 g of vanillin, cardamom, 1 teaspoon of lemon zest to the resulting mass and mix again.
  6. Then, add the flour mixed with baking powder in small portions and knead the dough. It should be soft and pliable.
  7. To make plum pie, we recommend using a 24 x 30 cm baking pan. Line the pan with plastic wrap, making sure the edges are long. This will allow the pie to be easily removed from the pan after baking.
  8. Place the dough on parchment paper and smooth it out with your hands. Place the prepared plums on top of the dough, with the cut side facing up at a slight angle.
  9. In another bowl, combine and beat with a mixer the remaining cheese, eggs, sugar, starch, vanilla, ginger, and lemon zest. Then, in a separate bowl, beat the cream thoroughly and fold it into the remaining ingredients with a spatula.
  10. Pour the resulting mixture onto the dough with plums and smooth it out.
  11. Place the baking tray with the pie in the oven preheated to 175 degrees for an hour.
  12. After baking, let the pie cool completely for 5 hours. Then dust with powdered sugar, cut into portions, and serve!
