Sweet Mexican tamales (tamales dulces) make a wonderful end to dinner or a great start to the weekend when served with Sunday brunch. They're made with masa harina corn flour and topped with fresh corn, nuts, raisins, cheese, banana, maple syrup, and sweet spices. Each tamale is wrapped in a banana leaf (corn leaves are also fine) and baked. Serve the tamales in their leaves.
