"Laab" is a Thai dish made from ground turkey (Larb) - a detailed recipe.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Laab:

  • 700 g of ground turkey (preferably dark meat)
  • 3 tablespoons vegetable or canola oil
  • 1/2 red onion, diced
  • 3 shallots, thinly sliced
  • 1 piece (10 cm long) lemongrass, finely chopped (about 1/4 cup)
  • 1 Thai chili pepper (such as prik kee nu), stemmed and thinly sliced, or 1 serrano chili pepper
  • 1/2 cup chopped fresh mint leaves
  • Salt and ground black pepper
  • 1 head of lettuce (leaves removed)
  • Submission option: sticky or steamed white rice

Refueling:

  • 1/3 cup fresh lime juice (from 5 limes)
  • 3 tablespoons fresh lemon juice (from 1 lemon)
  • 2 tablespoons fish sauce
  • 2 tablespoons of honey

Cooking the dish according to the recipe:


  1. RefuelingIn a small bowl, combine lime juice, lemon juice, fish sauce and honey.

    LaabHeat oil in a large skillet over medium heat. Add onion, shallot, lemongrass, chili pepper, and salt to taste. Cook until the vegetables begin to soften, about 5 minutes.
  2. Add the ground turkey and season with salt. Cook, stirring frequently, until the meat and vegetables are cooked through, about 5 minutes. Add the dressing and cook for another 2 minutes. Remove from the heat and stir in the mint. Season with salt and pepper to taste.

    Place the turkey mixture on lettuce leaves on a serving platter. Serve with sticky rice.
