How to Make Homemade Turkey Sausages

Instead of buying sausages with questionable ingredients, you can make natural, spicy, and equally delicious ones at home. What's more, they're not difficult to make. The same ground meat makes excellent patties, which, like sausages, can be frozen, cooked or uncooked, for later enjoyment. Turkey is also a good alternative to pork for those watching their fat and calorie intake.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1 kg of diced turkey meat
  • 1/2 cup chopped garlic
  • 6 tsp chili powder
  • 4 tbsp paprika
  • 2 tsp cayenne pepper
  • 2 tsp ground cumin
  • 2 teaspoons of salt
  • 1 teaspoon crushed red pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon ground black pepper
  • 2 tsp onion powder
  • 1/2 tsp garlic powder
  • Additionally: smoking chips

Cooking the dish according to the recipe:


  1. Place the turkey in a large bowl. In a smaller bowl, combine the remaining ingredients and mix thoroughly. Add the seasoning mixture to the turkey. Mix thoroughly. Cover and refrigerate for 24 hours.
  2. Grind the meat twice in a meat grinder. You can also use a food processor for this. Stuff half of the mixture into sausage casings to form 15-cm strands. Form the remaining meat into three patties, each weighing 250 grams. You can make the sausages pre-cooked and freeze them, or serve them smoked immediately.

  3. Light the grill and add damp wood chips to the drip tray. Place the sausages on the grate, close the grill, and smoke for 10–15 minutes.
