Lean turkey breast patties become especially juicy when stuffed. For the filling, use shredded mozzarella and chopped roasted bell peppers. The ingredients are sandwiched between two thin, ground turkey-only patties, then pressed together to form a single thick patty and grilled until cooked through and the cheese melts. Serve the patties as part of delicious burgers or with any side dish.

Recipe:


  • 0.6 kg lean ground turkey breast
  • 0.5 cup chopped roasted peppers, divided
  • 1/2 cup grated semi-skimmed mozzarella, divided
  • 1/4 teaspoon salt

Form the ground meat into 4 equal balls. Form each ball into 2 equal-sized patties, for a total of 8 patties. Top 4 patties with 2 tablespoons of roasted red peppers and cheese, top with the remaining patties, and press them around the edges to seal. Season with salt and freshly ground black pepper to taste. Grill or broil until cooked through, about 5 minutes per side.
