A beef patty prepared according to this recipe is perfect for any burger—all you have to do is place it on a bun and top it with sauces, vegetables, cheeses, and other toppings of your choice. The ideal burger meat is chuck chuck. This inexpensive cut is packed with rich beef flavor. The only spices you need are salt and black pepper. Make an indentation in each patty with your finger. This indentation will rise during frying, preventing the patty from becoming puffy. Grilling imbues the meat with a delicious, smoky flavor that outshines any spice.

Cooking the dish according to the recipe:
- Preheat the grill to medium-high heat. Form the ground beef into 4 balls, each weighing 170 grams (6 oz). Then gently flatten each one to form a patty 11 cm in diameter and about 2 cm thick. Use your thumb to make a 1 cm (0.5 in) indentation in the center of each patty (this will prevent the patties from swelling while frying). Season both sides with salt and black pepper.
- Lightly oil the grill grate, then place the patties on top, dented side up, and cook until crispy marks appear on the bottom, about 5 minutes. Flip and cook until crispy marks appear on the other side, about 3 minutes more for medium-rare meat.
- Transfer the patties to a plate and let them rest for 5 minutes to allow the juices to redistribute. Serve the patties on buns with any toppings of your choice.
