Basic burgers include only beef patties and buns, which are grilled and served with a variety of toppings. A kilogram of ground beef makes eight patties—a great idea for sharing with a group. Before grilling the patties, set up a bar of toppings and sauces near the grill so each guest can customize their burger. The bar could include ketchup, mustard, mayonnaise, pickles, cheese, crispy bacon, coleslaw, vegetables—basically, anything you could possibly put on a burger.

Preheat the grill to medium heat. Form 2 pounds (0.9 kg) of ground beef into eight 4-inch (10 cm) patties, making sure the edges are slightly thicker than the middle; season each patty generously on both sides with salt and black pepper. Grill until crispy, 3 to 4 minutes per side for medium-rare. Grill eight hamburger buns, halved horizontally, for about 30 seconds. Serve the beef patties on toasted buns with any toppings.
