How to Make the Best Hamburger Patties

Sliders (small cutlets)
These square cutlets are perfect for little ones. slider buns, which are used to make slider burgers. On a sheet of parchment paper, form 550 grams of ground chuck beef into a 15 x 20 cm rectangle. Cut it into 12 5 cm squares. Refrigerate for at least 20 minutes.

Preheat the grill to medium-high and brush the grates with oil. Season the patties with salt and pepper and cook for 5-6 minutes on each side.
Thin cutlets
We came up with this recipe after thin cutlets became very popular in hamburgersCover an inverted baking sheet with parchment paper. Season 450 g of ground beef with salt and pepper. Form 4 balls and place them on the baking sheet. Cover with parchment paper and press down with another baking sheet. Refrigerate for 1 hour.
Heat a cast iron skillet over medium-high heat and brush with vegetable oil. Fry the patties for 3 minutes on each side until crispy. Continue frying for another 1 minute on each side until nicely browned, topping each patty with a slice of cheese during the last minute, if desired.
Thick cutlets
These patties weigh 225 grams each. Divide 900 grams of ground beef into 4 pieces. Knead each piece in your hands, forming a patty 2.5 cm thick (don't overwork it). Sprinkle generously with coarse salt. Let sit at room temperature for 10 minutes.
Preheat the grill to medium-high and brush the grates with oil. Grill the patties, covered, for about 6 minutes per side, topping them with a slice of cheese for the last 3 minutes, if desired. Let them rest for 2 minutes before serving.
