- 1 small red onion, halved
- 450 g of minced chicken
- 1/4 cup panko breadcrumbs
- 1/4 cup hoisin sauce
- 1 tbsp grated peeled ginger
- 4 tsp. lightly salted soy sauce
- 3 teaspoons hot Asian chili sauce, such as sambal oelek
- 220 g of thinly sliced champignons
- 2 tsp. dark sesame oil
- Juice of 1 lime
- 4 whole grain hamburger buns

- Step 1
- Preheat oven to 350°F (190°C). Spray a baking sheet with cooking spray. Step 2
- Grate the carrots and half an onion into a large bowl. Add the chicken, panko breadcrumbsCombine the chicken, 2 tablespoons hoisin sauce, ginger, 3 teaspoons soy sauce, and 1 teaspoon sambal oelek and stir. Form the chicken mixture into 4 patties and place on the prepared baking sheet. Bake until tender, about 20 minutes. Step 3
- Meanwhile, thinly slice the remaining onion half. Combine in a bowl with the mushrooms, sesame oil, lime juice, and the remaining 1 teaspoon of soy sauce. Combine the remaining 2 tablespoons of hoisin sauce in another bowl with 2 teaspoons of sambal oelek and 1 tablespoon of water. Step 4
- Warm the hamburger buns in the oven. Serve the patties on the buns, drizzled with sauce, and topped with the mushroom salad.
