Cooking the dish according to the recipe:
- Preheat a charcoal or gas grill.
Meanwhile, place the minced meat in a large bowl and add the mustard, olive oil, thyme, garlic, salt, and pepper. Gently mix everything with a fork, being careful not to compact the minced meat. Form into 12 equal patties, 5 cm thick.
Once the grill is hot, brush the grates with oil to prevent the patties from sticking. - Place the patties on the grill and cook for 4 minutes. Then flip and cook for another 4-6 minutes until medium-rare, or a little longer for well-done. Two minutes before the end of cooking, sprinkle 30 grams of grated cheese on each patty and close the grill lid. Transfer the patties to a serving platter and cover with foil.
- Cut the buns in half and grill, cut side down.
- Spread the young arugula on the 12 bottom bun halves, top with the patties and a slice of tomato and onion. Top each slider with the other bun half and serve with ketchup. This dish is paired with wine made from the French Merlot grape variety.
