Bobby Flay serves these little burgers as an appetizer, topping them with a spicy mayonnaise made with chipotle peppers, adobo sauce, and a refreshing squeeze of lime.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Hamburgers

  • 450-570 g of ground beef from the shoulder (80% meat/20% fat)
  • Salt and freshly ground black pepper
  • Pieces of cheese, variety of your choice
  • Mini hamburger slider buns

Spicy mayonnaise

  • 1 cup mayonnaise
  • 2 chipotle peppers in adobo sauce
  • 1 tbsp adobo sauce
  • Juice of 1/2 lime
  • Salt and freshly ground black pepper

Fillings

  • Spicy mayonnaise
  • Pickles
  • Red onion rings

Cooking the dish according to the recipe:


  1. Spicy mayonnaise: Place the mayonnaise, chili sauce, and lime juice in a food processor and puree. Season with salt and pepper to taste.

    Hamburgers: Form the meat into tight patties weighing 55-85 grams. Season with salt and pepper.
  2. Preheat the grill to medium-high. Place the patties on the grill. Cook for about 4-5 minutes, until they are cooked through and crispy on one side, then flip and cook for another 4 minutes.

    When the patties are done, top each with a slice of your favorite cheese and close the grill to melt the cheese. Place the patty on a half mini burger bun, top with spicy mayo, and any other toppings you'd like.
