These French scallop-shaped cookies have long been a favorite beyond their native country. The delicacy is mentioned in Marcel Proust's novel "In Search of Lost Time," and several legends describe the dessert's origins. Brown butter imparts a nutty flavor to these airy cookies. Orange zest adds a fresh, vibrant flavor.

Cooking the dish according to the recipe:


  1. Preheat oven to 200°C.
  2. To make brown butter: Melt butter in a heavy saucepan over medium heat until it begins to bubble and foam, stirring frequently.

  3. Once the foam subsides, wait until the butter turns brown at the bottom. Then remove the pan from the heat. The entire browning process will take about 5 minutes. Be careful not to burn the butter.
  4. In a medium bowl, beat the eggs, sugar, and honey with an electric mixer until the mixture becomes thick and off-white. Add the brown butter and mix well.
  5. In a small bowl, sift the flour with the baking powder and 1/4 teaspoon of salt. Gently stir into the wet ingredients along with the zest, but only until combined.
  6. Fill greased Madeleine pans with batter and bake until golden brown, 9 to 11 minutes.
