A mixture of butter and hot sauce, enhanced with blue cheese, is the core ingredient of American Buffalo wings, whose popular flavor has long transcended chicken and is used in other dishes and appetizers to give them the famous Buffalo flavor. This easy-to-make sauce also makes a great complement to grilled beef steak. Simply drizzle it with hot butter when serving, sprinkle with crumbled blue cheese, and enjoy with a side of grilled corn. It's the perfect picnic dish when you're looking for an alternative to the usual ketchup with meat.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 0.7 kg skirt steak, cut into 4 pieces
  • 60 g unsalted butter, room temperature
  • 1 tbsp. Buffalo hot sauce
  • 4 ears of corn, shelled and broken in half
  • 1 tbsp extra-virgin olive oil
  • 1/4 cup crumbled blue cheese (about 60 g)

Cooking the dish according to the recipe:


  1. Preheat the grill to medium-high heat. In a small bowl, combine the butter, hot sauce, and 1/2 teaspoon of salt.
  2. Grill the corn, turning frequently, until lightly charred, about 10 minutes. Transfer to a plate.

  3. Meanwhile, rub the steak with olive oil and season with salt and black pepper. Cook for 3-4 minutes on each side for medium-rare. Transfer to a cutting board and let rest for 5 minutes; then slice.
  4. Brush the corn and steak with Buffalo butter. Sprinkle the steak with blue cheese.
