American biscuits differ from traditional buns in their cylindrical shape and delicious, flaky texture. Their charm lies in their quick preparation. They contain only the ingredients you'd find in any kitchen: flour, sugar, sour milk (or kefir), butter, and baking soda. Brush the finished buns with butter immediately, and for serving, prepare a delicious molasses butter by simply mixing the two ingredients until the butter has a visible molasses streak. Biscuits also pair beautifully with other toppings, or they can be served plain with dinner instead of bread.

Ingredients for the recipe:
- 2.5 cups flour + extra for work
- 165g unsalted butter (110g cubed, 55g melted)
- 1 tbsp baking powder
- 1 teaspoon coarse salt
- 1 teaspoon of sugar
- 1/4 teaspoon of baking soda
- 1 cup of sour milk or kefir
- 110 g unsalted butter, room temperature
- 2-3 tablespoons of molasses

Bake the layered buns:
Preheat oven to 200°C. Spray a baking sheet with cooking spray.- In a large bowl, combine the flour and cubed butter. Using a pastry blender, blend the butter into the flour until the mixture resembles coarse grains. Add the baking powder, salt, sugar, and baking soda. Make a well in the center of the flour mixture and pour in the buttermilk. Mix with a fork until the dough begins to form a ball. It will be slightly dry.
- Flour a clean work surface, your palms, and a rolling pin. Turn the dough out onto the work surface. Knead it for 1-2 minutes, folding it toward you each time. Then roll it out to a thickness of about 1 cm. Dust a 3-inch cookie cutter or the rim of a glass with flour and cut out round buns from the dough. Gather the remaining dough into a ball, roll it out again, and cut out more circles. Repeat this process until all the dough is used.
- Place the buns on a baking sheet and bake until the tops are golden brown, 10-15 minutes. While they're still warm, brush each bun with melted butter.

Mix butter and molasses. Serve warm rolls with butter.
