Traditional American biscuits are made with butter, but this recipe calls for only 33% cream. The biscuits are light and airy and quite easy to make, as long as you don't over-knead the dough. Cheddar, Parmesan, and green onions impart a unique flavor and aroma. If desired, you can omit the cheese and onions and make plain biscuits, or add spices to your liking. Biscuits are great for sandwiches. Filling suggestions are listed at the end of the recipe.

- 0.5 cups grated cheddar
- 2 tbsp. l. grated parmesan
- 1 tbsp baking powder
- 1 tbsp. sugar
- 1 green onion, thinly sliced
- 1.5 cups heavy cream + extra for greasing the dough
- Juice of half a lemon
- Special equipment: 5cm cookie cutter.

Cooking the dish according to the recipe:
- Preheat oven to 220°C. Line two baking sheets with parchment paper.
- In a large bowl, combine the flour, cheddar, Parmesan, baking powder, sugar, 1/2 teaspoon salt, a pinch of freshly ground black pepper, and green onions. Add the cream and lemon juice. Using a wooden spoon, mix the dough into a ball and transfer it to a floured work surface.
- Form the dough into a 1 cm thick circle. Using a 5 cm cookie cutter, cut out as many circles as possible. Gently press the scraps together and cut out more circles. Place the circles of dough on the prepared baking sheets, spacing them 2.5 cm apart. Brush the dough with a little cream. Bake on the middle rack of the oven until the buns are golden brown on the bottom, about 12 minutes.
