Flaky biscuits are typically served with savory dishes, sauces, or used in sandwiches. For a more dessert-like experience, simply sprinkle the tops with sugar. This will add sweetness and a crispy crust. Split the biscuit in half, spread with butter and jam, and enjoy.

Ingredients for the recipe:
- 2 cups of premium flour + extra for working with the dough
- 2 tsp baking powder
- 0.5 tsp of soda
- 0.5 tsp salt
- 6 tablespoons chilled unsalted butter,
chopped into small pieces, + 4 tbsp. melted butter - 3/4 cup chilled sour milk or kefir
- Heavy cream for greasing
- Granulated sugar, for sprinkling

Cooking the dish according to the recipe:
- Preheat oven to 230°C.
- Combine flour, baking powder, baking soda, and salt in a large bowl. Mix with a handheld pastry blender.
- Scatter pieces of cold butter over the flour mixture and continue to stir until the mixture resembles coarse meal. Add the soured milk and stir until the dough begins to come together.
- Turn the dough out onto a lightly floured work surface. Form it into a 25x30cm rectangle, about 2cm thick. Cut out circles using an 8cm diameter cutter. Gather the scraps and cut out more circles.
- Place the cookies on a parchment-lined baking sheet, brush with cream, and sprinkle with sugar. Bake until lightly golden brown, 12-15 minutes. Remove from the oven and brush the tops with the remaining melted butter.
