Chopped dill added to the dough imbues American biscuits with a wonderfully refreshing, spicy aroma. To ensure the biscuits rise well and are flaky, do not knead the dough for too long (it will look a bit rough), and when cutting out circles, do not twist the cutter. Serve the finished biscuits warm, and mix softened butter with honey and a pinch of sea salt. The flavor will perfectly complement the notes of dill.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Biscuits

  • 2 cups of premium flour + extra for working with the dough
  • 2 tsp baking powder
  • 1/4 teaspoon of baking soda
  • 1 teaspoon fine salt
  • 12 tablespoons chilled unsalted butter, diced
  • 2 tbsp chopped fresh dill
  • 0.5 cups of sour milk or kefir + extra for greasing the dough

Honey oil

  • 4 tbsp unsalted butter, softened
  • 2 teaspoons of honey
  • 1/4 teaspoon sea salt

Cooking the dish according to the recipe:


  1. Preheat oven to 220°C.
  2. Combine the flour, baking powder, baking soda, and fine salt in a food processor. Add the butter and chop into pea-sized pieces. Add the dill, then slowly whisk in the sour milk until the dough is smooth. Transfer it to a floured work surface and knead three to five times. Form the dough into a disk.

  3. Roll out the dough to a thickness of about 1 cm. Using a round cookie cutter or a 6 cm glass, cut out circles from the dough. Gather the scraps, roll them out, and cut out more circles. Place the buns on a baking sheet, brush with buttermilk, and bake until golden brown, 10-12 minutes.
  4. Meanwhile, prepare the honey butter.:

    In a bowl, mix the butter, honey, and sea salt until smooth. Serve with warm buns.
