Fill your home with the magical aroma of spices and bake this festive gingerbread-like cake. The addition of molasses gives the cake a deliciously dark exterior, and a dusting of powdered sugar adds a particularly festive touch.


Ingredients:

  • 2 and 3/4 cups premium flour
  • 2 tbsp gingerbread spice mix
  • 1 and 2/3 cups light brown sugar
  • 4 eggs
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Combine 2 3/4 cups flour, 2 tablespoons gingerbread spice mix, 1 1/2 teaspoons baking powder, and 1/2 teaspoon each baking soda and salt. In a separate bowl, beat 8 ounces (220 g) softened butter with 1 2/3 cups light brown sugar with a mixer on medium speed until fluffy, 4 minutes. Beat in 4 eggs, one at a time, then beat in 2 teaspoons vanilla extract until fully incorporated.
  • Step 2
  • Beat in 1/4 cup molasses on low speed, then add the flour mixture in three additions, alternating with 3/4 cup milk. Press the batter into a greased and floured 10-cup round cake pan with a vent in the center.
  • Step 3
  • Bake at 350°F (175°C) until a skewer inserted into the center comes out clean, 55 minutes to 1 hour. Let cool in the pan for 10 minutes, then invert the cake onto a wire rack to cool completely. Dust with powdered sugar.
