Craving a delicious baked good but short on ingredients? This recipe requires just three ingredients and will yield a tender and delicious cake. The best part is, you can use any cake mix and ice cream you have on hand, in any combination. For example, bake a cake using chocolate cake mix and mint chocolate chip ice cream—it's an epic combination! The only requirement is to use high-quality ice cream. Standard ice cream contains too much air and won't melt properly.

Ingredients:

  • 1 package (430 g) of dry cake mix (any)
  • 2 cups good quality ice cream (any flavor), completely melted
  • 3 large eggs
  • Special equipment: round cake pan with a hole in the center (capacity 12 cups)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 350°F (175°C). Spray a cake pan thoroughly with cooking spray, covering the entire inside.
  • Step 2
  • In a large bowl, combine the cake mix, ice cream, and eggs until smooth, then pour into the prepared pan.
  • Step 3
  • Bake until a cake tester inserted into the center comes out clean and the edges of the cake begin to pull away from the pan, 35 to 40 minutes.
  • Step 4
  • Cool the cake in the pan for 20 minutes, then place a wire rack over the pan and invert the cake onto the rack. Let cool completely.
