Ingredients:
- 1 cup blanched almonds
- 1/2 cup sugar
- 2 eggs category CO
- 110 g butter
- A pinch of salt
- 1/4 cup raspberry jam
- 1/4 cup apricot jam
- 2 cups sliced fruit (bananas, strawberries, raspberries, kiwi, or peaches)
- 3 tablespoons fresh lemon juice

- Step 1
- Preheat oven to 190°C (375°F). Grease a 9-inch (23 cm) cake pan with butter and line it with foil. Chop the almonds in a food processor. Add the sugar and eggs and beat for one minute. Add the butter and salt and beat for another minute. Step 2
- Pour the mixture into the prepared pan and bake for 20-25 minutes. Cool on a wire rack in the pan. Once the cake has cooled, carefully remove it from the pan.
Melt the raspberry jam and spread it over the cake. Slice the fruit or berries and arrange them on top. In a small saucepan, combine the apricot jam with the lemon juice. Heat until melted. Strain the mixture and pour it over the fruit.
