Chinese green onion pancakes are more like flatbreads and are easy to make with minimal ingredients. For the dough, you'll only need flour and water, and for the filling, you'll need vegetable oil and green onions. With a few simple steps, you'll have delicious, flavorful pancakes that can be served as an appetizer with ginger dip or as a lunchtime alternative to regular bread.

Ingredients:


Pancakes
  • 2 cups premium flour
  • 1 cup of boiling water
  • 0.5 cup chopped green onions
  • 1 tbsp. l. sesame oil
  • 0.5 cup rapeseed oil (canola)
  • 0.5 cup ginger dipping sauce

Ginger dipping sauce
  • 1/4 cup soy sauce
  • 1/4 cup Chinese Zhenjiang vinegar
  • 1/4 cup chopped green onions
  • 1 teaspoon chopped ginger
  • 1 teaspoon red pepper flakes
  • 1 teaspoon of sugar
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Sift the flour into a bowl. Gradually add water in a steady stream, mixing with a wooden spoon. Continue adding water until a ball of dough forms. You can knead it in a food processor. Let the dough rest for about 30 minutes, covered with a damp cloth.
  • Step 2
  • On a floured work surface, roll the dough into a thin rectangle. Grease with the oil mixture, sprinkle with green onions, and season with salt and pepper. Carefully roll the dough into a log. Cut into 4 pieces. Take one piece and twist it 3 times. Form a spiral with this piece, roll it out again, and smooth it out to form a 12–15 cm (5–6 in) pancake.
  • Step 3
  • Grease a preheated non-stick frying pan with canola oil and fry the pancakes on both sides until golden brown. Slice and serve immediately with the sauce.

    Ginger dipping sauce:
    Mix all ingredients and serve.
