This recipe comes from the popular California restaurant First Awakenings, which specializes in traditional American breakfasts and lunches. Ingredients:

  • 1/2 tsp salt
  • 2 tablespoons of vegetable oil
  • 2/3 cup beaten eggs
  • 3 cups of milk
  • 2 cups of flour
  • 2 tablespoons powdered sugar
  • 2 tsp vanilla extract
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Add all ingredients to a large bowl and beat with a mixer for about 60 seconds or until well combined. Strain the mixture through a fine-mesh colander to remove any lumps.
  • Step 2
  • Heat a 25cm (10in) nonstick frying pan with high sides. Pour enough vegetable oil to coat the bottom. Add about 60ml (2 oz) of batter. Swirl the pan, spreading the batter evenly across the bottom. Cook until the top of the pancake is crisp (about 1 minute). Then flip and cook on the other side for about 20 seconds. Remove from the pan and continue cooking with the remaining batter.
