Pancakes with peas and ricotta cheese - a detailed recipe.


Ingredients:

  • 1.5 cups premium wheat flour
  • 4 eggs
  • 1/2 tsp salt
  • 2 cups of milk
  • 4 tbsp (60 g) butter
  • 2 cups fresh green peas, peeled and de-podded
  • 2.5 cups ricotta cheese, strained for 30 minutes in a sieve lined with cheesecloth
  • 1 tbsp. grated parmesan
  • 1/4 cup butter, cut into small pieces
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • First, prepare the pancakes: Place flour in a large bowl. Crack the eggs over the flour and mix. Add salt and gradually whisk in the milk until it's completely incorporated. Let the dough rest for 20 minutes.
  • Step 2
  • Meanwhile, melt the butter in a 12-14 inch (30-35 cm) skillet and add the peas. Cook slowly over medium heat until soft, about 15 minutes. Let the peas cool. Stir them into the ricotta.
  • Step 3
  • Heat a 6-inch nonstick skillet and coat it with olive oil. Reduce the heat to medium and pour 1.5-2 tablespoons of batter into the skillet.

    Fry for 20-30 seconds until pale golden brown, then flip. Fry the other side for 20 seconds and transfer to a plate. Continue this process until you've used all the batter: you should have 17-19 pancakes.

    Place 3 tablespoons of filling on each pancake and fold it in half. Fill each pancake in the same way.
  • Step 4
  • Preheat oven to 230°C.

    Grease the bottom and sides of a 25x20 cm ceramic baking dish with butter. Place the stuffed pancakes in the dish, overlapping them.

    Sprinkle the pancakes with grated Parmesan cheese, scatter pats of butter over them, and bake for 12-15 minutes, until hot and crispy. Remove from the oven and serve the pancakes hot, or let them rest and serve at room temperature.
