A soft, young Italian cheese, similar to cottage cheese but smoother, like ricotta spread, with a slightly sweet flavor. Ricotta is made from cow, goat, or sheep's milk. It is used as a filling for lasagna and ravioli, as well as in desserts and pies.

Ricotta cheese produced in different provinces has different flavors and is named after the province: ricotta siciliano, ricotta romano, ricotta piemontese. Ricotta cheese is also differentiated by consistency: ricotta dolce (not salty), ricotta moliterno (slightly salty, dry), ricotta forte (shortly aged, soft).
