Whipped ricotta with raisins and pine nuts

The base of the sauce is whipped ricotta, which has a delicate texture and pairs beautifully with many ingredients, adapting to and complementing them. This allows for the savory capers and sweet raisins to be combined in a single sauce. The finished sauce is drizzled with a sweet-tart dressing of olive oil, vinegar, and honey and topped with toasted pine nuts. Ingredients:
- 2 tbsp + 1 tsp white wine vinegar
- 1.5 teaspoons of honey
- 3 tablespoons light raisins
- 2 tbsp. l. olive oil
- 450 g whole milk ricotta
- 1 tbsp capers, drained
- 2 tablespoons toasted pine nuts
- Chopped parsley for serving
- Toasted baguette slices for serving

1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:
- Step 1
- In a small saucepan, combine 3 tablespoons of water, 2 tablespoons of vinegar, 0.5 teaspoon of honey, and a pinch of salt. Bring to a boil, then reduce heat to a simmer and add the raisins. Cook until the liquid is reduced by half, 6-8 minutes. Allow the raisins to cool in the liquid, then drain. Step 2
- Meanwhile, in a small bowl, combine 1 teaspoon each of vinegar and honey with olive oil, a pinch of salt and a small amount of ground black pepper. Step 3
- Place the ricotta, capers, 1 teaspoon of salt, and a pinch of ground black pepper in a food processor and pulse a few times. Transfer to a bowl and drizzle with the vinaigrette. Top with raisins, pine nuts, and parsley. Serve with baguette slices.
