Palacinta – Hungarian pancakes – detailed recipe.


Ingredients:

  • 3 eggs
  • 1 and 1/4 cups wheat flour
  • 1 cup of milk
  • 1 teaspoon of sugar
  • A pinch of salt
  • 1 glass of mineral water
  • Butter for frying
  • Raspberry jam or chocolate-hazelnut spread, for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Mix eggs, flour, milk, sugar, and salt to form a thick pancake batter. Let the batter rest for 1-2 hours.
  • Step 2
  • Just before cooking the pancakes, at the very last moment, add sparkling water.
  • Step 3
  • Heat a 20 cm (8 in) frying pan. Once hot, add 1/4 teaspoon of butter. Melt it and grease the bottom by rotating the pan.
  • Step 4
  • Pour a portion of the batter into the pan and gently tilt and rotate it until the batter completely covers the bottom.

    When bubbles appear on the surface of the pancake, flip it over and cook for another 4-5 seconds. Remove the pancake from the pan. Repeat this process until the batter is used up, brushing the pan with oil before each batch of batter.
  • Step 5
  • Serve topped with raspberry jam, chocolate spread, or your favorite topping. Roll the crepe into a tube and serve with fresh berries.
