Movie theaters use butter-flavored vegetable oil to coat popcorn; it has a lower water content than real butter, resulting in crispier popcorn. High-quality ghee has the same effect. Make ghee the simplest way—in the microwave—and use it not only on popcorn but also on any dish, making it even more delicious.

Melt 220g of butter in a glass bowl in the microwave. Let it sit for a few minutes; the butter will separate into three layers. Skim off the top layer, then slowly pour the clarified butter into a heat-proof container; discard the bottom layer. Use 3 tablespoons of the hot melted butter to make 10 cups of popcorn; store the rest in the refrigerator (it's great for frying).
