Gemma Stafford grew up in Ireland, and her mother always had a pie or crumble on hand for when anyone dropped by for tea and a chat. Like most traditional Irish baked goods, her mother's pies weren't particularly elaborate, but their delicious flavor came from simple, high-quality ingredients: Irish butter, rhubarb from the garden, and apples picked from the tree next door. "In Ireland, everything is local," says Gemma. When she became a professional cook, her most popular baked goods were her excellent holiday pound cakes and peanut butter pie (recipes can be found at biggerbolderbaking.com), but she still loves simple, classic desserts like this one from her mother. "It's a humble pie, but it's a big reward," says Gemma. "A lot of Irish recipes are similar to this one." Gemma recommends using salted butter for this pie. "It adds a little more flavor, and it's noticeable," she says.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Streusel

  • 6 tablespoons chilled salted butter, plus extra for greasing the pan
  • 3/4 cup premium flour
  • 1/4 cup oatmeal
  • 0.5 cup granulated sugar
  • A pinch of salt

Pie

  • 110 g salted butter at room temperature
  • 0.5 cup granulated sugar
  • 2 tsp vanilla extract
  • 2 large eggs
  • 1 and 1/4 cups premium flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/8 tsp salt
  • 3 tbsp. milk
  • 3 Granny Smith apples, peeled and thinly sliced
  • Powdered sugar, for dusting

Cooking the dish according to the recipe:


  1. Preheat oven to 175°C. Grease a 22cm round baking pan with butter and line the bottom with parchment paper.
  2. Prepare the streusel:

    In a medium bowl, combine the flour, oats, granulated sugar, and salt. Rub the cold butter into the flour mixture until it's completely incorporated and the mixture has the texture of coarse breadcrumbs. Refrigerate while you prepare the pie.

  3. Make an apple pie:

    In a large bowl, beat the butter and sugar with a mixer on medium-high speed until light and fluffy. Add the vanilla extract, then beat in the eggs one at a time. In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt. Using a rubber spatula, fold the flour mixture into the liquid mixture along with the milk. Transfer the finished batter to the prepared pan and top with the sliced ​​apples in an even layer. Top the apples with streusel.
  4. Bake the pie until the top is golden brown and crisp, 60-70 minutes. Remove from the oven and let cool slightly, then transfer the pie to a wire rack. When ready to serve, dust the pie with powdered sugar.
