The distinctive umami flavor of this seasoning comes from porcini mushroom powder. It keeps well, so mix up a double batch to keep it on hand. You'll be amazed at how it can transform even the most ordinary everyday dishes. Here are two of our favorite ways to use it. Add it to macaroni and cheese or popcorn, for an even more vibrant flavor.
The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

- 2.5 tsp porcini mushroom powder
- 2 tsp. champignon powder
- 2 tsp onion powder
- 1 teaspoon crushed red pepper flakes
- 1 teaspoon mustard powder
- 0.5 tsp dried thyme

Cooking the dish according to the recipe:
- Combine the mushroom powders, onion powder, chili flakes, mustard powder, thyme, 2 teaspoons salt, and 0.5 teaspoon black pepper in a small bowl. Transfer to an airtight container. The umami seasoning can be stored at room temperature for up to 3 months.
- Mac and cheese:
Add 1 tablespoon umami seasoning to store-bought cheese sauce before tossing it with the pasta.
Popcorn:
Microwave a 100g bag of natural-flavored popcorn. Drizzle with 1 tbsp olive oil and sprinkle with 1 tsp umami seasoning.
