This drink is often called the "devil's advocate": Once you taste this sweet nectar, you'll be tempted to take another sip. Create a Dutch flavor at home—enjoy the traditional Dutch liqueur, Advocaat, as a thick, seasonal drink for the winter holidays, add it to vanilla ice cream, or use it as a filling for desserts, pastries, and cakes.

Note on consistency: Dutch "Advocate" is thicker than eggnog. So much so that it can and should even be eaten with a spoon, it's like a thick malt cocktail, which is also scooped with a spoon—only with eggnog flavor. If you prefer a thinner consistency, add a little cream.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 10 egg yolks
  • 1/2 tbsp salt
  • 1.3 cups of sugar
  • 1.5 cups of brandy or cognac
  • 2 tsp vanilla extract
  • Whipped cream (optional)
  • Cocoa powder (optional)

Cooking the dish according to the recipe:


  1. Beat the yolks, salt and sugar until thick.
  2. Slowly pour in the brandy or cognac, whisking constantly until combined.

  3. Pour the mixture into a saucepan and heat over low heat, stirring constantly.
  4. Be patient. The "Advocate" is ready when it's thickened well and hot, but not boiling. Boiling evaporates the alcohol, and you lose some of the flavor and half the enjoyment.
  5. When the mixture is thick and very hot, remove the saucepan from the heat and stir in the vanilla extract.
  6. Allow the liqueur to cool, then refrigerate until serving time, pouring into small glasses or espresso cups.
  7. For traditional serving Top with whipped cream and a little cocoa powder, or serve with just the cream or plain.

    Recommendations


    Stir a little whipped cream into the drink to make a sophisticated tokkelroom dessert.

    Egg liqueur "Advocate" can be stored in the refrigerator for no more than 3 days.

    Regular brandy can be replaced with the spiced Dutch brandy Schelvispekel – you get an interesting version of the liqueur.
