Cooking the dish according to the recipe:

  1. Bring a saucepan of salted water to a boil. Add the orecchiette pasta and cook for the amount of time indicated on the package. Set aside 1 cup of the stock for the sauce, and discard the remaining liquid.
  2. Heat the olive oil in a large skillet over medium heat. Add the sausage and cook, breaking it up with a wooden spoon, until it begins to brown, about 3 minutes. Add the green onions and cook until softened, about 3 minutes more. Add the garlic, mushrooms, 1/2 teaspoon salt, and pepper to taste and cook, stirring occasionally, until the mushrooms begin to brown, about 3 minutes more. Add the cherry tomatoes and continue cooking until they soften slightly, about 3 minutes more.

  3. Add the broth to the pan and continue simmering for another minute. Add the orecchiette pasta and cheese to the sauce, season with salt and pepper to taste. Divide the pasta among bowls, drizzle with olive oil, and sprinkle with plenty of cheese and green onions.
