To make this simple yet delicious pasta carbonara, you'll need just five ingredients: noodles, raw spicy sausage, Parmesan cheese, an egg, and fresh herbs. It takes just 20 minutes to prepare and is perfect for a quick midweek dinner.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 220 g wide egg noodles
  • 2 tbsp. l. olive oil
  • 2 raw hot Italian sausages, crumbled
  • 1/4 tbsp. grated parmesan
  • 2 large eggs, beaten
  • 1/4 cup finely chopped fresh parsley

Cooking the dish according to the recipe:


  1. Cook the noodles in a pot of boiling water according to package instructions. Drain the noodles, setting aside a small amount of water in a separate container.
  2. Place a large, straight-sided skillet over medium-high heat and add the onion and sausage. Cook, breaking the sausage into pieces, for about 5 minutes. Season with salt and freshly ground black pepper—this is important!

  3. In a small bowl, whisk together the eggs and Parmesan.
  4. Add the drained pasta to the pan and stir until coated with the sausage fat. Remove the pan from the heat and add about a spoonful of the pasta water along with the egg and cheese mixture. Stir quickly to coat the pasta. Continue stirring until the water has evaporated slightly and a sauce-like consistency is formed. Add the parsley and stir again. Serve immediately.
