Ingredients:

  • 340 g spaghetti
  • 1 cup finely grated Parmesan cheese (about 110 g), plus a little more for garnish
  • 6 thick slices bacon, cut into 1.25cm pieces
  • 4 lightly beaten eggs
  • Coarse salt and freshly ground pepper
  • 2 tbsp chopped parsley
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions. Reserve 1/4 cup of the cooking water and drain the rest.
  • Step 2
  • Meanwhile, in a large skillet, cook the bacon over medium heat for 8 minutes, turning occasionally, until crisp.

    Add the spaghetti and reserved water to the pan and shake until thoroughly combined.
  • Step 3
  • Add eggs, Parmesan, 1/2 teaspoon salt and 1/2 teaspoon pepper and mix.

    Cook for about 1 minute until the mixture reaches the consistency of sour cream, stirring constantly to prevent the eggs from curdling and becoming omelet-like. Add the parsley.

    Sprinkle with Parmesan cheese before serving.
