This crispy candied bacon will captivate you with its combination of sweet caramel flavor from brown sugar and the spiciness of chili. It can be served as an appetizer, used in burgers and sandwiches, or crumbled into salads—in short, it will enhance almost any dish. For candied bacon, use thick-cut bacon: it won't curl during baking and won't burn before the sugar caramelizes. Bake the bacon on a rack to prevent it from swimming in rendered fat and ensure it turns out perfectly crispy.
