Replace traditional mustard and ketchup on your hot dog with an exotic pineapple relish, where the fruity sweetness harmoniously combines with the tartness of lime and the heat of jalapeño. Simmer pineapple with sweet and hot peppers and spices in a skillet and serve the finished relish on toasted hot dogs in buns. It's quick and easy to make, and the flavor is amazing. In a large skillet, heat 2 tablespoons olive oil over medium-high heat. Add 1/2 cup diced red onion, 1 cup diced bell pepper (red and yellow), and 1 diced jalapeño; season with salt and pepper to taste. Cook, stirring, until the vegetables are tender, 6 to 8 minutes.
Add 1 cup chopped pineapple, 1 tablespoon honey, 1 teaspoon mustard seeds, and the zest and juice of 1 lime; cook until thickened, another 5 to 8 minutes. Remove from heat and stir in 1/4 cup each chopped cilantro and parsley.
Grill 4 sausages, turning, until blackened with grill marks. Serve on toasted buns with pineapple relish.
