The secret to making delicious French fries is to fry them twice at two different temperatures. So for this recipe, you'll need a deep frying pan and a thermometer.
The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Cooking the dish according to the recipe:
- Peel the potatoes and cut them lengthwise into 1 cm thick slices. Cut each slice into strips and rinse in a colander under cold running water to remove excess starch. Place the potato pieces on a paper towel to dry.
- Fill a deep frying pan halfway with vegetable oil and place it on the stove. Heat the oil to 130°C (275°F). It's important to use a thermometer for this. You can also use an electric deep fryer; simply set it to the desired temperature. Caution! Hot oil is extremely dangerous! Do not leave the frying pan or deep fryer unattended!
- Using a large metal spoon, drop some of the potatoes into the hot oil and stir thoroughly. Fry for 10 minutes or until browned.
- Remove the potatoes from the pan and set them aside on a paper towel to remove excess oil. Repeat with the other half of the potatoes.
- Heat oil in a frying pan to 190°C (375°F). Add the potatoes and fry for another 4-5 minutes until crispy and golden brown. Remove the potatoes from the pan with a slotted spoon and drain on a paper towel.
- Place the potatoes on a platter, sprinkle with salt and drizzle with malt vinegar.
