How to Make Peanut Butter and Fruit Jam Blondies

Time: 2 hours 30 minutes
Complexity: easily

Sandwich King took the quintessential American PB&J sandwich—peanut butter and fruit jam—and transformed it into a delicious and sweet dessert. Instead of peanut butter, which is used for the nutty flavor, Jeff Mauro added peanut butter granules and chopped roasted peanuts to the dough, as well as fruit preserves instead of jam. Depending on your family's taste preferences, you can add raspberry, strawberry, or grape preserves to the dough. Before baking the cakes, create swirl patterns on the dough surface.

Cooking the dish according to the recipe:

  1. Preheat the oven to 180°C and position the rack on the middle shelf. Line a 30- or 40-cm baking pan with two sheets of parchment or foil, crisscrossing them and allowing at least 3 cm to hang over the edges of the pan.
  2. In a small bowl, combine the flour, baking powder, and salt. In another bowl, whisk together the melted butter and brown sugar until dissolved. Add the eggs and vanilla and mix until smooth. Add the dry ingredients to the butter mixture and gently beat with a spatula until smooth. Fold in the granules. peanut butter and nuts.

  3. Pour the batter into the baking pan and spread the jam on top. Using a skewer or knife, create swirls of jam in the batter. Bake until golden brown and risen, 30-35 minutes. Let cool on a wire rack. Holding the parchment or pan by the edges, transfer the pie to a serving platter. Slice into 24 pieces and serve!
