This delicious and healthy dessert is made as a sandwich of rice cakes spread with natural peanut butter, filled with berry jam with chia seeds, and a slice of pear or apple. The jam is made with fresh raspberries and blueberries and requires no cooking. It's refined sugar-free and rich in fiber and vitamins. Simply mash the berries with chia seeds and honey and let it sit for a while. It can be refrigerated for up to three days and added anywhere you would put regular jam.
The recipes use measuring containers with the following volumes:

Ingredients for the recipe:
- 0.5 cup raspberries
- 0.5 cup blueberries
- 1 tbsp. chia seeds
- 2 teaspoons of honey
- 8 crispy puffed brown rice cakes
- 4 tbsp. creamy peanut butter
- Half a small Asian pear or Golden Delicious apple, cored and cut into 4 equal slices

Cooking the dish according to the recipe:
- In a medium bowl, combine the raspberries, blueberries, chia seeds, 1 tablespoon of water, and honey. Mash with a potato masher or a fork until the mixture forms a chunky jam. Cover and refrigerate until the chia seeds plump up and the jam thickens slightly, about 30 minutes (the raspberry seeds will add a crunchy texture).
- Spread one rice cake with 1 tablespoon of peanut butter and top with 1/4 of the jam and a slice of pear. Top with another rice cake. Repeat to make 3 more sandwiches.
