A cheese platter for a buffet can capture all the lighthearted spirit you brought back from vacation. Add a tropical touch to the appetizer to evoke the taste of heavenly delight. Pineapple, as an exotic topping, complements the melted, gooey cheese and crispy prosciutto. For this recipe, choose soft cheeses; French white-veined varieties like Brie or Camembert are ideal. These cheeses are great served with fruit, nuts, or herbs. They can also be baked whole.
For a truly delicacy, wrap the cheese in prosciutto, an Italian dry-cured ham. Traditional prosciutto is made with only sea salt, but various varieties of this national dish may also contain seasonings, such as rosemary.
The recipes use measuring containers with the following volumes:

3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.

Ingredients for the recipe:
- 1 2.5cm thick slice of pineapple, peeled and cored
- 1 head of cheese (220-350 g) Brie or Camembert, cut in half lengthwise
- 8 slices prosciutto (about 220 g)
- Dry biscuits (crackers, etc.), bread

Cooking the dish according to the recipe:
- Prepare the grill for direct and indirect heat.For a gas grill (3 or more burners), turn all burners to medium-high heat; after 15 minutes, turn off the side burners and reduce the remaining burners to medium heat.
For charcoal grillsLight the charcoal briquettes in the chimney starter and, when ready, transfer them to the side of the grill. Place a drip pan on the other side to catch any grease fires. - Grill the pineapple over direct heat until golden brown on both sides, about 5 minutes per side. Cool for 5 minutes, then place on one of the cut cheese halves. Place the other cheese half on top of the pineapple, cut side down.
Place the prosciutto slices on a work surface, one on top of the other, so that they cross in the center and overlap like spokes of a wheel. Place the cheese and pineapple in the center of the ham and wrap it completely around the cheese, slice by slice. - Grill over direct heat until golden brown and crispy, about 3 minutes. Flip with a spatula and cook for 3 minutes on the other side. Move to indirect heat and cover the grill.
Grill until the cheese is heated through and begins to melt, about 5-8 minutes, depending on your grill type. Serve immediately with bread and crackers.
