This quick version of Chinese dan dan noodles cooks in just 20 minutes, transforming inexpensive instant noodles into a delicious dish bursting with rich flavor. Served in a hot broth made with soy sauce, spicy sesame oil, and pickle brine, the noodles are infused with a gamut of spicy, sour, hot, and sweet flavors. Fried ground pork adds a hearty and filling touch. All the ingredients in this Asian dish are readily available at your local supermarket, and the clever combination of ingredients ensures an authentic dan dan experience.

Ingredients for the recipe:
- 3 x 85g packages of instant noodles (no seasoning packets needed)
- 4 tablespoons of vegetable oil
- 220 g of minced pork
- 1 tbsp. grated peeled ginger root
- 6 tablespoons lightly salted soy sauce
- 1/3 cup chopped canned cucumbers + 6 tbsp. brine
- 2 tablespoons hot sesame oil

Cooking the dish according to the recipe:
- Bring a large pot of water to a boil. Cook the noodles according to package directions. Drain and rinse thoroughly under cold water. Drain again and set aside.
- In a large skillet, heat 2 tablespoons vegetable oil over high heat until shimmering. Add the ground pork and 2 teaspoons ginger and cook, breaking up the ground pork with a wooden spoon, until lightly browned, about 3 minutes. Add 2 tablespoons soy sauce, chopped pickles, 3 tablespoons brine, and 1/4 cup water. Cook, scraping up any browned bits from the bottom of the pan, until the pork begins to brown again, about 4 minutes. Remove from heat.
- In a large bowl, combine 1/4 cup water with the remaining 4 tablespoons soy sauce, 3 tablespoons brine, 2 tablespoons vegetable oil, hot sesame oil, and the remaining 1 teaspoon ginger. Add the noodles and toss to coat evenly. Top with the pork, toss, and serve immediately.
